Recipe: Carrot Salad
This is what happens when I’m running low on food and don’t want to go to the store: I scrounge and experiment. In this case, I had a lot of carrots and a lemon, and added stuff from the pantry. I had this three times, and played with a variety of add-ons, and included here are the ones I liked. Experiment yourself and see what variations you like.

A bowl full of grated carrots with these toppings was just about enough for a light meal for me. This would also make a good side dish.
Ingredients
The basics:
- grated carrots
- lemon juice
- olive oil
Optional add-ons:
- sesame seeds
- dried cranberries
- half an avocado, sliced
- a sprinkle of brown sugar
- grated cheese
- cashews
- salt
Instructions
- Combine all ingredients except the carrots in your serving bowl and mix thoroughly, then slowly add in the carrots, mixing untill they are well coated. Enjoy.
- On the proportions of olive oil and lemon juice: add equal parts if you like it tangy, or cut back the lemon juice to your desired tanginess.
