Recipe: Carrot Salad

This is what happens when I’m running low on food and don’t want to go to the store: I scrounge and experiment. In this case, I had a lot of carrots and a lemon, and added stuff from the pantry. I had this three times, and played with a variety of add-ons, and included here are the ones I liked. Experiment yourself and see what variations you like.

Carrot Salad

A bowl full of grated carrots with these toppings was just about enough for a light meal for me. This would also make a good side dish.


    The basics:
  • grated carrots
  • lemon juice
  • olive oil
    Optional add-ons:
  • sesame seeds
  • dried cranberries
  • half an avocado, sliced
  • a sprinkle of brown sugar
  • grated cheese
  • cashews
  • salt


  1. Combine all ingredients except the carrots in your serving bowl and mix thoroughly, then slowly add in the carrots, mixing untill they are well coated. Enjoy.
  2. On the proportions of olive oil and lemon juice: add equal parts if you like it tangy, or cut back the lemon juice to your desired tanginess.
